Mexican Stuffed Peppers Recipe
Ingredients:
- 4 large bell peppers (any color)
- 1 tablespoon olive oil
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 pound ground beef
- 1 cup cooked rice
- 1 cup black beans, rinsed and drained
- 1 cup corn kernels
- 1 can (14.5 ounces) diced tomatoes
- 2 tablespoons tomato paste
- 1 teaspoon chili powder
- 1/2 teaspoon cumin
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 cup shredded cheddar cheese
- Fresh cilantro, for garnish
Instructions:
- Preheat the oven to 375°F (190°C). Slice the tops off the peppers and remove the seeds and membranes. Place the peppers in a baking dish and set aside.
- In a large skillet, heat the olive oil over medium heat. Add the onion and garlic and cook until softened.
- Add the ground beef to the skillet and cook until browned. Drain any excess grease.
- Add the cooked rice, black beans, corn, diced tomatoes, tomato paste, chili powder, cumin, salt, and black pepper to the skillet. Stir to combine.
- Spoon the filling mixture into the peppers, packing it tightly. Top each pepper with a sprinkle of shredded cheddar cheese.
- Cover the baking dish with foil and bake for 25 minutes.
- Remove the foil and bake for an additional 10-15 minutes, or until the peppers are tender and the cheese is melted and bubbly.
- Garnish with fresh cilantro before serving.
