  • 6 cups Granny Smith apples, peeled, cored, and thinly sliced
  • 1/2 cup granulated sugar
  • 1/4 cup all-purpose flour
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1 tablespoon lemon juice
  • 1 tablespoon unsalted butter, melted

Instructions

  1. In a large mixing bowl, combine the flour and salt. Add the cold, cubed butter and mix with a pastry cutter or your hands until it resembles coarse crumbs.
  2. Add the ice water and mix until the dough comes together. Form the dough into a ball, wrap it in plastic wrap, and refrigerate for at least 30 minutes.
  3. Preheat the oven to 425°F (220°C) and place a baking sheet in the oven to preheat as well.
  4. In a separate mixing bowl, combine the sliced apples, sugar, flour, cinnamon, nutmeg, and lemon juice. Toss well to coat the apples evenly.
  5. Remove the dough from the refrigerator and divide it into two equal portions. Roll out one portion on a floured surface to fit a 9-inch (23 cm) pie dish.
  6. Transfer the rolled-out dough to the pie dish and press it against the bottom and sides.
  7. Pour the apple mixture into the pie dish and dot the top with the melted butter.
  8. Roll out the second portion of dough and place it on top of the apple filling.
  9. Trim and crimp the edges of the pie crust to seal it.
  10. Make small slits on the top crust to allow steam to escape.
  11. Place the pie on the preheated baking sheet in the oven and bake for 45-50 minutes, or until the crust is golden brown and the filling is bubbly.
