- 2 1/2 cups all-purpose flour
- 1 teaspoon salt
- 1 cup unsalted butter, cold and cut into small pieces
- 1/4 cup ice water
- 8 cups apples, peeled, cored, and sliced
- 1 cup granulated sugar
- 1/4 cup all-purpose flour
- 1 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1 tablespoon lemon juice
- 1 tablespoon unsalted butter, melted
- 1 egg, beaten
- 1 tablespoon granulated sugar, for sprinkling
Instructions
- In a large bowl, combine the flour and salt. Cut in the cold butter using a pastry cutter or your hands until the mixture resembles coarse crumbs.
- Sprinkle ice water over the mixture and knead it until the dough comes together. Divide the dough in half and shape each half into a disk. Wrap the disks in plastic wrap and refrigerate them for at least 1 hour.
- Preheat the oven to 425°F (220°C).
- In a large bowl, combine the sliced apples, sugar, flour, cinnamon, nutmeg, and lemon juice. Toss until the apples are coated evenly.
- Roll out one of the dough disks on a lightly floured surface to fit a 9-inch pie plate. Place the rolled-out dough in the pie plate.
- Spoon the apple mixture into the pie plate and dot with the melted butter.
- Roll out the second dough disk on a lightly floured surface and place it on top of the apple filling. Pinch the edges of the two dough layers together to seal the pie.
