This lemon blueberry cake is a perfect dessert for spring or summer. The combination of tangy lemon and juicy blueberries is simply irresistible. The cake is moist and tender, with a burst of flavor in every bite.

Ingredients:

  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 cup unsalted butter, at room temperature
  • 1 1/2 cups granulated sugar
  • 4 eggs
  • 1 teaspoon vanilla extract
  • 2 tablespoons lemon zest
  • 1/2 cup lemon juice
  • 1/2 cup milk
  • 1 1/2 cups fresh blueberries

Instructions:

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.
  2. In a medium bowl, combine the flour, baking powder, and salt. Set aside.
  3. In a large bowl, cream together the butter and sugar until light and fluffy. Beat in the eggs, one at a time, then stir in the vanilla extract, lemon zest, and lemon juice.
  4. Gradually mix in the dry ingredients alternately with the milk. Fold in the blueberries.
  5. Pour the batter into the prepared pan and smooth the top. Bake for 40-45 minutes, or until a toothpick inserted into the center comes out clean.
  6. Allow the cake to cool in the pan for 10 minutes, then remove from the pan and transfer to a wire rack to cool completely before serving.
