Ingredients
- 2 pounds of ripe tomatoes
- 1 onion, chopped

- Salt and pepper to taste
- 1 cup of vegetable broth
- 1/4 cup of heavy cream
Instructions
- Preheat your oven to 400°F (200°C). Cut the tomatoes in half, remove the seeds, and place them on a baking sheet.
- Drizzle the tomatoes with olive oil and sprinkle them with sugar, dried basil, dried oregano, salt, and pepper.
- Roast the tomatoes in the oven for about 25-30 minutes or until they are soft and slightly charred.
- In a large saucepan, heat olive oil over medium heat. Add the chopped onion and minced garlic, and sauté them until they are soft and golden.
- Add the roasted tomatoes to the saucepan and stir them well. Cook them for about 5 minutes.
- Pour the vegetable broth into the saucepan and bring to a boil. Reduce the heat and simmer for about 15 minutes.
- Using an immersion blender, puree the soup until smooth. Alternatively, you can transfer the soup to a countertop blender and blend it in batches.
- Return the soup to the saucepan and stir in the heavy cream. Cook for an additional 2-3 minutes.
- Season with salt and pepper to taste. Serve the soup hot with a sprinkle of fresh basil or croutons, if desired.
