These Spicy Thai Chicken Noodles are a perfect balance of flavors and spice. Made with chicken, noodles, vegetables, and a flavorful sauce, this dish is quick and easy to make for a tasty weeknight dinner.

Ingredients

  • 8 oz chicken breast, sliced
  • 8 oz rice noodles
  • 1/2 cup bell pepper, sliced
  • 1/2 cup carrot, julienned
  • 1/2 cup green onions, chopped
  • 2 cloves garlic, minced
  • 2 tbsp soy sauce
  • 2 tbsp oyster sauce
  • 1 tbsp sriracha sauce
  • 1 tbsp honey
  • 1 tbsp vegetable oil
  • Salt and pepper to taste

Instructions

  1. In a small bowl, whisk together the soy sauce, oyster sauce, sriracha sauce, and honey. Set aside.
  2. Cook the rice noodles according to the package instructions. Drain and set aside.
  3. Heat the vegetable oil in a large skillet or wok over medium-high heat.
  4. Add the chicken slices to the skillet and cook until browned and cooked through, about 5 minutes.
  5. Remove the chicken from the skillet and set aside.
  6. In the same skillet, add the bell pepper, carrot, green onions, and garlic. Cook until the vegetables are tender, about 3-4 minutes.
  7. Add the cooked noodles and chicken back to the skillet.
  8. Pour the sauce over the noodles and chicken, and toss to coat everything evenly in the sauce.
  9. Cook for an additional 2-3 minutes, until everything is heated through.
  10. Season with salt and pepper to taste.
  11. Serve hot and enjoy!
