Spicy Thai Noodle Salad

A delicious and flavorful salad packed with Thai spices and fresh vegetables.

Spicy Thai Noodle Salad

Ingredients:

  • 8 ounces rice noodles
  • 1 cup shredded carrots
  • 1 cup chopped bell peppers
  • 1 cup thinly sliced cucumber
  • 1/2 cup chopped cilantro
  • 1/4 cup chopped green onions
  • 1/4 cup chopped peanuts
  • For the dressing:
  • 2 tablespoons soy sauce
  • 2 tablespoons lime juice
  • 1 tablespoon brown sugar
  • 1 tablespoon fish sauce
  • 1 tablespoon sriracha sauce
  • 1 clove garlic, minced

Instructions:

  1. Cook the rice noodles according to package instructions. Drain and set aside.
  2. In a large bowl, combine the shredded carrots, chopped bell peppers, sliced cucumber, chopped cilantro, and chopped green onions. Toss to mix well.
  3. In a small bowl, whisk together the soy sauce, lime juice, brown sugar, fish sauce, sriracha sauce, and minced garlic.
  4. Add the cooked rice noodles to the bowl of vegetables and pour the dressing over the top. Toss until everything is well coated.
  5. Garnish with chopped peanuts and serve immediately.

Note: For a spicier salad, increase the amount of sriracha sauce to your liking.
